Riassunto In una scala di produzione globale il riso, insieme a mais e frumento, è tra i cereali più diffusi ed ha una storia evolutiva che risale a circa 8.200 anni fa. Utilizzando la tecnica chiamata “orologio molecolare si è giunti a stabilire che le due sub specie più importanti di riso asiatico, Oryza sativa indica e Oryza sativa japonica hanno un’unica origine. Il termine “riso” indica sia la pianta sia la cariosside che ha dimensioni e peso molto diversi nelle 80.000 varietà o linee conservate, adatte a condizioni eco-geografiche marcatamente differenti. Non si può dimenticare infatti che la risaia, oltre ad essere un campo coltivato, è un complesso ecosistema per cui è necessaria un’attenta valutazione agroambientale. Guardando alla filiera del riso si nota che questo cereale non è solo un alimento prezioso, i suoi coprodotti, in particolare lolla e pula separati durante la lavorazione del risone, possono trovare impiego nell’alimentazione animale, nella produzione di composti bioattivi e ingredienti per il settore cosmetico, nutraceutico e farmaceutico. Abstract Together with corn and wheat, rice is one of the most common cereal and has an history dating back to about 8,200 years ago. Using a technique called "molecular clock” it was established that the two most important sub species of Asian rice, Oryza sativa indica e Oryza sativa japonica have a single origin. The word “rice” indicates both the plant and the kernel that has very different size and weight in the 80,000 varieties or lines preserved, suitable for eco-geographical conditions markedly different. It is clear that the paddy field, besides being a cultivated field, is a complex ecosystem that requires a careful evaluation of the agro-environment impact. Looking at the supply chain of rice is known that this cereal is not only a valuable food, its co-products, in particular rice husk and rice bran, separated during processing of paddy, may be employed as animal feed, in the production of bioactive compounds and ingredients for cosmetics, nutraceutical and pharmaceutical industries
