Four groups of insects bred in Italy and one imported from Chile, have been studied by nutritional point of view with particular interest on microbiological and lipid feature. The microflora is almost enterely formed by Gram negative bacteria such as Enterobacteriaceae. No pathogen strains for human have been found. Lipid content is quite high, low levels of stearate and high levels of oleate have been observed. The imago form shows fatty acids of high nutritional value.
